Originating from the town of Edam in the Netherlands, it is produced from cow’s milk and, rarely, goat’s milk. Edam cheese has a mild, slightly salty taste and is nearly odorless compared to other cheeses. As Edam cheese ages, it hardens and its flavor profile becomes sharper. Like almost all Dutch cheeses, its exterior is coated with paraffin and/or beeswax. Its fat content of 28% is lower compared to other traditional cheeses, making it less suitable for melting. It is one of the most popular and widespread cheeses in the world.
