A cheese originating from the Po Valley in Northern Italy, similar to parmesan cheese. It takes its name from the words Grana (grainy/crumbly) and Padano (from the Po River). In Latin, “Padus” means river. There are fewer regulations controlling its production compared to Parmigiano-Reggiano. Grana Padano is a semi-fat, hard, and granular cheese that is slowly aged for at least twelve months. The 18-month-old cheese is pale yellow, sharper, and distinctly granular; it is also richer in aroma and flavor. When looked at closely, white spots can be seen. Produced throughout the year, the cheese can vary in taste depending on the year as well as the season. Grana Padano is produced from skimmed milk. Each wheel weighs between 24 and 45 kg. There is a thin, pale yellow rind on the outside of the wheel. If the product passes the quality tests after aging, the Grana Padano brand is fire-branded onto the product. It is used in thin slices, grated, or powdered. It pairs very well with pasta. It is a snack that goes very well with red wine. Origin: Italy. Source: Cow. Fat: 39/41%. Aging: 12 – 18 months.
