Karacadağ is an extinct volcanic mountain located on the border of Şanlıurfa and Diyarbakır provinces in our country. Products grown in volcanic areas, known as the most fertile agricultural regions, have a higher mineral content compared to other regions. It is naturally irrigated with natural spring waters (5-10°C) and melted snow waters in settlements at an altitude of 1200 meters. The high protein and high starch content within the grain makes this rice delicious. This paddy also has aromatic properties during cooking due to the volatile fatty acids it contains. Since its glycemic index is low, it is also suitable for consumption by diabetics. Karacadağ rice is one of the most special agricultural products in our country due to its nutritional value and the geographical characteristics of the place where it is grown. Farmers who grow this rice leave the soil fallow for a minimum of 1 year to rest the soil and increase efficiency.
