Produced in accordance with traditional methods, this is an Italian cheese made from goat’s milk, prepared by pressing it either cooked or uncooked. It often has a dirty yellow rind. Depending on the aging period, the inside of pecorino is white, cream-colored, or straw-yellow, and it is produced under different names and in various forms across all southern regions of Italy between June and October. It is one of the special cheeses used in pasta, sauces for certain meat dishes, and cheese platters. It is a hard cheese with a quite sharp taste. Origin: Italy.
