Gouda, whose production began in the 12th century, takes its name from the town where it was first made. Like Edam, it is made from cow’s milk. It contains 30–40% fat. It has a light yellow color. It is produced in flat, round wheels weighing between 4.5 and 5.5 kg, with a paraffin-coated surface. Beneath this protective paraffin layer lies a thin, natural rind. It has a soft texture and a mild, creamy flavor. When left to mature for a long time, its color turns to a deep golden yellow, its texture becomes firmer, and its flavor becomes saltier and more pronounced. It is made from pasteurized cow’s milk.
