This Italian-origin cheese is perhaps one of the most well-known and widely consumed cheeses. Since it is a product with a Protected Designation of Origin (PDO), it is subject to very strict rules. For a parmesan cheese to be named Parmigiano Reggiano, it must be produced solely and exclusively within the borders of Italy’s Emilia-Romagna region (Parma, Modena, Reggio Emilia) and satisfy specific production conditions. It must be aged for at least 12 months, and it can only be offered for sale if it is deemed suitable during subsequent inspections. A single wheel ranges between approximately 35-40 kg, requiring 500 liters of milk to produce. Its production began in the 11th century. It can only be produced from the milk of naturally grazed cows. It has a granular texture; as it matures, it becomes more brittle and its aroma sharpens. With its highly unique structure and rich aroma that allows for versatile use, it pairs perfectly with various recipes. The red stamp signifies 18 months of aging. The silver stamp signifies 22 months of aging. The gold stamp signifies 30 months of aging. The 36-month-aged cheese is straw-yellow, richer, and more granular.
