REAL SWISS Appenzeller Classic 6.5 Kg
The cheese comes from the Appenzell mountain region in Switzerland. The cheese was awarded the AOC identity name (similar to a patent but in the cheese industry) in 1981 and is therefore protected by a special authority in Switzerland. This is a distinction that takes decades to earn, proving the uniqueness, high quality, and authenticity of the cheese. Three main varieties of Appenzeller are produced: the 3-4 month matured “Classic” (with a silver label); the 4-6 month matured “Surchoix” (gold label); and the limited production “Extra” matured for 6 months or longer (black label). One of the key characteristics of Appenzeller is the brine curing process that each cheese wheel undergoes. A mixture of wine, spices, and herbal brine is applied to each cheese.
