Having a sweeter and firmer structure, the Hatay pumpkin perfectly adapts to the making of crispy pumpkin dessert in lime (Kireçte Kabak) thanks to these characteristics. Originating in the past from the idea of protecting soft foods while cooking and surviving to the present day, this method is achieved by soaking thinly sliced pumpkins in slaked lime for 24 hours.
